One good classic soul food dish is black-eyed peas, often served alongside fresh corn bread. Some other soul food dishes are fried catfish, collard greens and fried okra.
One way to make black eyed peas is to cook 4 to 5 slices of bacon in a 5-quart Dutch oven until they are crispy. Set the bacon aside to drain and add 1 large chopped onion, 1 stalk of diced celery and 4 minced garlic cloves.
Cook the ingredients until they are tender and add 6 cups of chicken broth, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 4 cups fresh or frozen black eyed peas. Bring this to a boil, reduce the heat to a simmer, and crumble in the bacon. Cover the Dutch oven and simmer the peas for 30 to 60 minutes or until they are tender. Add fresh peppers or hot sauce to make this recipe spicier.
To make fried okra, cut 1 pound of fresh okra into 1-inch pieces and combine it in a bowl with 1 large diced green tomato, 1 chopped onion, 1 minced clove of garlic and 1 sliced jalapeno pepper. In another bowl, beat 2 eggs with 1/4 teaspoon of black pepper, 1/4 teaspoon of salt and 1/2 cup of milk. Pour the milk mixture over the vegetables and toss the ingredients thoroughly to coat well.
Gradually stir in 1 cup of cornmeal until it soaks up all of the liquid. Fry the okra in a pan with very hot oil until it is golden brown on one side, then turn and brown the other side. Drain the excess oil on a paper towel before serving the okra.
