To make Food Network Kitchen's slow-cooker pulled pork, start by mixing together 1 tablespoon brown sugar, 2 teaspoons paprika, 1 teaspoon mustard powder and 1/2 teaspoon cumin, along with 2 teaspoons salt and 1/2 teaspoon pepper. Rub the spice mix on a 3 to 4 pound pork shoulder. Heat 2 tablespoons vegetable oil in a large skillet, then add the pork, and brown it on all sides. Take the pork out of the skillet after about five minutes, then whisk the drippings in the pan with 3/4 cup water. Pour the liquid into a slow-cooker.
Add 1/2 cup apple cider vinegar, 3 tablespoons tomato paste, 2 tablespoons brown sugar and 2 cups water to the slow cooker. Place the pork in the slow-cooker, and cook on low for eight hours. After cooking, place the pork on a cutting board, and strain the liquid into a saucepan. Boil the liquid, and cook for about 10 minutes, until the mixture is reduced by half. Chop the pork, then add it to 1 cup of the liquid, and add additional salt and apple cider vinegar to taste.
Serve the pulled pork on potato buns, along with barbecue sauce and coleslaw.
