Ree Drummond's shrimp stir fry recipe from the Food Network provides a good way to prepare the dish. It calls for 2 pounds of jumbo shrimp along with vegetables, spices, herbs and lemon juice.
To make Ree Drummond's shrimp stir fry, melt 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat in a large skillet. Add 2 pounds of peeled and deveined jumbo shrimp and 4 cloves of minced garlic. Sauté the shrimp and garlic until the shrimp is opaque, then remove it from the pan and set it on a plate. Turn the heat up to high and add 2 large diced zucchini, the kernels from 2 large ears of corn, 3/4 cup sliced red grape tomatoes and 3/4 cup sliced yellow grape tomatoes. Season with salt and pepper to taste.
Place the shrimp back into the pan, and toss the ingredients together. Cook for approximately 1 minute, or until the shrimp is heated through. Pour the stir fry onto a large serving platter, then sprinkle it with fresh basil and fresh Parmesan cheese shavings. Squeeze the juice of 1 lemon over the top of the dish, and serve it by itself or on top of rice or pasta.
