To make Food Network Kitchen's shrimp scampi, place 1 1/2 pounds of peeled and deveined shrimp on a plate and pat with a paper towel until completely dry. Season the shrimp with salt and pepper while heating a large skillet over medium heat. Add 2 tablespoons of butter to the skillet, and allow it to foam and subside before raising the heat to high and adding the shrimp. Cook the shrimp on one side for two minutes, adding 2 tablespoons of minced garlic after one minute. Turn the shrimp and cook for two more minutes. Place the shrimp in a bowl.
Return the skillet to the heat and pour in 1/4 cup of dry white vermouth and 1 tablespoon of freshly squeezed lemon juice. Boil for about 30 seconds, until slightly thickened, scraping any brown bits from the bottom and sides of the pan. Stir in 2 teaspoons of finely chopped fresh flat-leaf parsley leaves and 1/4 cup of grated lemon zest. Pour this sauce over the shrimp, season to taste, and toss to coat.Learn more about Seafood
