To make Cajun Shrimp and Rice, heat 1 tablespoon of butter, 2 tablespoons of olive oil and 3 minced cloves of garlic in a skillet for one minute. Add 2 teaspoons of Cajun seasoning, followed by 1 pound of large, peeled and de-veined shrimp. Cook for one minute, and season with salt and pepper to taste. Add 4 chopped plum tomatoes and 2 chopped bunches of scallions to the pan, and cook for one minute while stirring. Add 3 cups of cooked white rice and 1/4 cup of water, and cook for three more minutes before adding 3 tablespoons of chopped parsley.
To make Lemon Shrimp with Parmesan Rice, bring 2 cups of chicken broth to a boil, add 2 cups of uncooked instant rice, cover, and set the mixture aside for five minutes. In a large skillet, combine 1 pound of peeled and de-veined medium shrimp, 2 tablespoons of butter and 1/2 cup of chopped green onions, and cook for four to five minutes. Stir in 2 teaspoons of minced garlic and cook for one more minute before stirring in 3 tablespoons of lemon juice and 1/4 teaspoon of pepper. Stir 1/2 cup of Parmesan cheese and 2 tablespoons of fresh parsley into the rice, and serve the shrimp over the rice.
