A mixture of 3 tablespoons each of dried rosemary, oregano and sage, with 2 tablespoons each of dried ginger, marjoram and thyme, plus 1 tablespoon each of black pepper and sea salt make a good basic seasoning for chicken and other poultry. This recipe stays fresh for up to 6 months when stored in an airtight container in a cool, dark place. This basic recipe is a good seasoning for many dishes from whole roast chicken to chicken noodle soup.
Coarsely grinding together 1 cup of black peppercorns, 1/3 cup of dried lemon peel, 1/4 cup of dried onion flakes, 1/4 cup of dried thyme leaves and 3 tablespoons of coriander in a spice or coffee grinder makes a lemon pepper spice blend that works well with chicken. Rubbing the blend onto chicken before grilling, baking or pan frying adds a zesty flavor. Additional lemon peel provides more citrus taste.
Whisking together 2/3 cup of chili powder; 1/2 cup of sugar; 1/4 cup each of kosher salt, garlic powder and onion powder; and 1 tablespoon of cayenne pepper makes a spicy-sweet rub for barbecuing chicken. Massaging the rub into the meat before grilling it or smoking it gives the chicken a good flavor.
