To make the seafood cocktail sauce, pour 1 cup of ketchup into a bowl, and stir in 3 tablespoons of grated onion, 3 tablespoons of prepared horseradish, 2 tablespoons of fresh lemon juice and 2 tablespoons of chopped fresh tarragon. Alternatively, use chopped fresh dill or thyme instead of tarragon. Cover the bowl, and chill the sauce in the refrigerator for at least one hour before serving.
To prepare the tartar sauce, put 1/2 cup of mayonnaise into a food processor. Add 2 tablespoons of diced pickles, 1 tablespoon of white wine vinegar, 1 tablespoon of capers and 1 teaspoon of coarse ground mustard. Add salt and black pepper. Process the ingredients in quick, short bursts to combine them, but do not allow the mixture to become completely smooth.
To make the salmoriglio sauce, vigorously whisk 2 tablespoons of fresh lemon juice with 2 tablespoons of extra-virgin olive oil. Stir in 1/2 tablespoon of chopped fresh oregano, 2 minced cloves of garlic and 1 teaspoon of lemon zest. Add salt and black pepper to taste.
