Make seafood salad by boiling 2 stalks of quartered celery, 2 smashed garlic cloves, the juice from 1/2 a lemon, and salt and pepper to taste in 10 cups of water. Add 8 ounces of halved baby carrots to the pot for 2 minutes and 3/4 pound of peeled and deveined shrimp for 4 minutes. Immediately remove and rinse the shrimp and carrots, and then add 1/2 pound of halved sea scallops to the pot. After 2 minutes, remove and rinse the scallops well.
In a bowl, toss the shrimp, scallops and carrots with romaine lettuce, 1/2 avocado, 1 tablespoon of capers, 1 sliced celery stalk and 2 cups of croutons. Puree the other 1/2 avocado with the juice from 1/2 a lemon, 1/3 cup of poaching liquid, 1 tablespoon of caper brine, 1 tablespoon of mayonnaise and 1 chopped garlic clove. Drizzle the dressing over the salad.
To make smoked-salmon cobb salad, toss 3 ounces of smoked salmon with 1 diced avocado, 3 sliced hard-boiled eggs, 3 ounces of bacon and 1 head of torn Bibb lettuce. Drizzle with a dressing made from 3/4 cup of buttermilk, 1/2 cup of mayonnaise, 1/4 cup of minced shallots, 1 tablespoon of lemon juice and 3 tablespoon of dill.
