To make the Scotto family recipe for stuffed crepes, start by combining 1 cup of whole milk ricotta, 1 1/2 pound of grated mozzarella, 1/2 pound of chopped spinach, 1 egg and a 1/2 cup of grated Parmesan in a large bowl. Mix in 1 teaspoon of salt, a pinch of white pepper and a pinch of nutmeg.
