A good sausage meat stuffing recipe is provided by the Food Network and uses Italian sausage and croutons in conjunction with spices and vegetables. Another good recipe calls for sausage, stuffing mix, cranberries and apples.
To make sausage stuffing, cook 1 pound of sweet Italian sausage in a skillet, drain the fat, and remove the meat. In the same skillet, saute 3 cups of chopped onions and 2 cups of chopped celery in 1/2 cup of butter for 10 minutes. Add the sausage along with the cooked vegetables, 6 cups of croutons, 1 tablespoon of chopped fresh sage, 2 tablespoons of chopped fresh parsley and 2 tablespoons of chopped fresh thyme to a bowl. Whisk together 1/2 teaspoon of ground allspice, 1/4 cup of maple syrup, 2 cups of dried cherries, 1 cup of chopped and toasted pecans and 2 cups of chicken stock in a separate bowl. Drizzle the dressing over the sausage mixture, and toss it thoroughly before spooning it into a baking dish. Bake the stuffing at 350 degrees F for one hour covered and 20 more minutes uncovered.
Another recipe calls for cooking 2 diced onions, 3 cups of chopped celery, 6 cups of chopped leeks, 5 chopped apples and 1 pound of sausage in 8 tablespoons of butter, and then seasoning the mixture with 6 teaspoons of poultry seasoning, 2 cups of dried cranberries, and 2 teaspoons each of fresh rosemary, sage and parsley. Stir in 1 box of stuffing mix and 2 cups of vegetable stock before spooning the mixture into a casserole dish. Bake the stuffing at 350 degrees F for 45 minutes.
