To make sausage stuffing, cook 1 pound of sweet Italian sausage in a skillet, drain the fat, and remove the meat. In the same skillet, saute 3 cups of chopped onions and 2 cups of chopped celery in 1/2 cup of butter for 10 minutes. Add the sausage along with the cooked vegetables, 6 cups of croutons, 1 tablespoon of chopped fresh sage, 2 tablespoons of chopped fresh parsley and 2 tablespoons of chopped fresh thyme to a bowl. Whisk together 1/2 teaspoon of ground allspice, 1/4 cup of maple syrup, 2 cups of dried cherries, 1 cup of chopped and toasted pecans and 2 cups of chicken stock in a separate bowl. Drizzle the dressing over the sausage mixture, and toss it thoroughly before spooning it into a baking dish. Bake the stuffing at 350 degrees F for one hour covered and 20 more minutes uncovered.
Another recipe calls for cooking 2 diced onions, 3 cups of chopped celery, 6 cups of chopped leeks, 5 chopped apples and 1 pound of sausage in 8 tablespoons of butter, and then seasoning the mixture with 6 teaspoons of poultry seasoning, 2 cups of dried cranberries, and 2 teaspoons each of fresh rosemary, sage and parsley. Stir in 1 box of stuffing mix and 2 cups of vegetable stock before spooning the mixture into a casserole dish. Bake the stuffing at 350 degrees F for 45 minutes.Learn more about Meat
