For convenient counter-top baking in the roaster oven, place a foil covered wire rack in the bottom. Bake cakes, pies, cookies, biscuits, convenience foods and casseroles by simply placing them into the roaster, adding the lid and setting the control to the baking temperature specified in the recipe.
To prepare baked beans combine 7 pounds of canned pork and beans, 2 pounds of cut up bacon, 1 pound of brown sugar, 1/4 cup each of prepared mustard and barbecue sauce and 1/8 cup of Worcestershire sauce in the cooking well of a 400 degree Fahrenheit preheated roaster. Stir well, cover and when it begins to boil, turn the heat down to 250 degrees Fahrenheit. Simmer for 2 hours, stirring often.
For a delicious stew, coat 8 pounds of beef stew meat with 2 cups of bread crumbs and place into the roaster with 4 pounds each of carrots and potatoes cut into pieces, six celery stalks cut into 1-inch pieces, four quartered onions, six 26-ounce cans of tomato soup, 8 cups of beef broth, 2 teaspoons of salt and 1 teaspoon of pepper. Stir until the liquids are incorporated, cover and set the control to 250 degrees Fahrenheit, cooking a minimum of 4 hours and as long as 8 hours for additional flavor enhancement.
