Pillsbury's Waldorf salad brings together mayonnaise, spinach, apples and more. It is easy to prepare and serves eight. Martha Stewart suggests a Waldorf salad that uses a yogurt-based dressing, rather than mayonnaise, and it serves two.
Pillsbury's Waldorf salad is quite simple to prepare: using a large bowl, blend together 1/2 cup of mayonnaise, 2 tablespoons of thawed apple juice concentrate and 1/4 teaspoon of ground cinnamon. Stir in 1/2 cup of chopped walnuts, 1/2 cup of chopped celery, 1/2 cup of halved seedless red grapes, and 4 cups of cubed red apples from approximately 2 large apples. Ensure they are coated with the mayonnaise-based mixture. Take out a separate bowl and place about 4 cups of fresh torn spinach leaves in the bottom of it. Spoon the salad mixture over the spinach leaves and toss well before serving.
To prepare Martha's Stewart's Waldorf salad, begin by bringing together 1/4 cup of low-fat yogurt and 1 tablespoon of fresh lemon juice in a bowl. Add 1/4 teaspoon of ground pepper and 1/2 teaspoon of coarse salt to season the mixture. Use a whisk to blend the ingredients together. Add 1 chopped apple (approximately 2 cups), 1/2 cup of halved red seedless grapes, 1/2 cup of chopped toasted walnuts and 1/2 cup of celery (thinly sliced crosswise). Toss ingredients to ensure they are well coated with the dressing. Now cover and refrigerate the salad until it is served. One half of the salad should be served on two Boston lettuce leaves, and the remaining portion on two other leaves.
