Recipes featuring vanilla wafers include banana pudding and cheesecake nibbles. Some dessert recipes use whole vanilla wafers as a crust for mini cheesecakes or to add colorful crunch to pudding.
Create a banana pudding dessert by adding 1 package cream cheese to a large bowl and beating until fluffy. Add 1 can sweetened condensed milk, 1 package instant vanilla pudding mix, 3 cups cold milk and 1 teaspoon vanilla extract, beating until smooth. Fold in 1/2 container thawed frozen whipped topping, and set aside. In the bottom of a large baking dish, line 1/2 package of vanilla wafers, and top with 4 sliced bananas. Spread pudding mixture on top of the bananas, top with the remaining half of the whipped cream, and chill before serving.
To make mini cheesecakes, arrange 36 2-inch foil baking cups on baking sheets with sides. Place 1 vanilla wafer, flat side down, into the bottom of each baking cup. Divide semi-sweet, milk chocolate and butterscotch flavored morsels into three containers. Drop 5 to 6 morsels on top of each wafer.
In a large bowl, beat 2 packages softened cream cheese, 1/2 cup granulated sugar and 2 tablespoons all-purpose flour until creamy. Stir in 2 large eggs and 1 teaspoon vanilla extract. Spoon generous tablespoons of cheese mixture into each cup, and bake for 15 to 17 minutes at 350 degrees. After removing from the oven, top each cup with remaining morsels while cheesecakes are still warm. Cover and chill before serving.
