Good recipes that use sweet potatoes as a main ingredient include roasted cinnamon sweet potatoes with honey, and classic sweet potato casserole. Both recipes require preparing the sweet potatoes for cooking by peeling off their skins and cutting the potatoes into 1-inch cubes.
Ingredients needed to make the roasted sweet potatoes recipe include 4 cubed sweet potatoes, 1/4 cup extra virgin olive oil, 1/4 cup honey, 2 teaspoons ground cinnamon and a desired amount of salt and pepper. Distribute the sweet potatoes in one layer on a roasting tray, and drizzle olive oil over the potatoes. Drizzle the honey over the potatoes, and then sprinkle the potatoes with cinnamon, followed by salt and pepper. Bake the potatoes at 350 degrees Fahrenheit for 25 to 30 minutes, or until tender. Drizzle on more olive oil before serving.
Classic sweet potato casserole requires cooking 4 cups of sweet potatoes in water until tender. Then drain the potatoes and mash them. Transfer the mashed potatoes to a large bowl and stir in 1/2 cup sugar, 2 beaten eggs, 1/2 teaspoon salt and 4 tablespoons of softened butter. Pour in 1/2 cup of milk and add 1/2 teaspoon vanilla, then mix until smooth. Spread filling into a baking dish and sprinkle 2 cups miniature marshmallows on top. Combine 1/2 cup packed brown sugar, 3 tablespoons softened butter and 1/2 cup of chopped pecans. Sprinkle the mixture on top and bake for 30 minutes.
