Spicy sliders and cheeseburger dip are two good recipes using SPAM. The spicy sliders recipe calls for classic SPAM, whereas the cheeseburger dip is made with SPAM with bacon.
To make spicy sliders, mix 1 cup of mayonnaise with 1 1/2 tablespoons of hot sauce and 1 teaspoon of paprika. Lightly beat 3 eggs in a separate bowl, and place 2 cups of seasoned breadcrumbs in another bowl. Slice 12 ounces of classic SPAM into 2-inch pieces, and dip each slice into the beaten eggs and then the breadcrumbs.
Saute the SPAM slices in hot oil until golden brown, and drain them on paper towels. Assemble each slider by layering a fried SPAM slice with 1 slice of cooked bacon, 1/2 pineapple ring, some of the mayonnaise sauce and another fried SPAM slice. Repeat with the rest of the sliders, and place a toothpick in each one to serve.
To make the cheeseburger dip, cook 1/2 pound of ground beef in a large skillet until browned, and drain well. Set the beef aside, and heat 12 ounces of diced SPAM with bacon until lightly browned. Set the SPAM aside to cool. In the same skillet, cook 1/2 diced onion and 1 minced garlic clove.
Mix 4 ounces of cream cheese with 1/2 cup of sour cream, 1/4 cup of mayonnaise, 1/2 cup each of shredded mozzarella and cheddar cheese, 2 tablespoons of ketchup and 1 tablespoon of Worcestershire sauce. Stir in the beef, SPAM and onion mixture. Pour the dip into a baking dish, and bake for 15 to 20 minutes at 350 degrees Fahrenheit.
