One good recipe that uses scallops is linguine with scallops and brown butter, posted by Real Simple. The recipe takes a total of 20 minutes to prepare and cook, and it serves four people.
The ingredients for this scallops recipe include 1/2 cup panko, or Japanese bread crumbs; 1 teaspoon of lemon zest; 2 tablespoons of olive oil; 3/4 pound of linguine and 1 cup of frozen peas. Additional ingredients are 16 sea scallops, patted dry, 4 tablespoons or 1/2 stick of unsalted butter, 2 tablespoons of chopped fresh tarragon leaves, kosher salt and black pepper.
Preheat the oven to 350 degrees Fahrenheit. Bake the panko, lemon zest, a tablespoon of the oil and 1/4 teaspoon each of salt and pepper on a rimmed baking sheet until golden, tossing once. Remove from the oven, and let cool.
Cook the linguine according to the instructions. Add the peas at the last minute of cooking, and reserve 1/2 cup of the cooking water before the pasta is drained. Heat the rest of the oil in a nonstick skillet over medium-high heat. Sprinkle the scallops with 1/2 teaspoon each of salt and pepper, and cook until done.
Rinse out the pasta pot, and melt the butter over medium-high heat, stirring until golden. Add the pasta, peas, scallops, tarragon, 1/2 teaspoon of salt and 1/4 cup of the pasta water. Toss to coat. Add more water if the sauce is too tight. Serve sprinkled with toasted bread crumbs.
Another recipe is scallop ceviche by Martha Stewart, in which the scallops are "cooked" in lime juice, garnished with cilantro leaves and avocado, and served in their own shells.
