Good recipes using amaranth flour include amaranth flour crackers and amaranth pancakes. To make amaranth flour crackers, mix 2 cups of flour, 1 teaspoon of salt and 1 teaspoon of baking powder in a bowl. Add in 2 tablespoons of olive oil and 2 tablespoons of honey before placing the mixture into a food processor.
In the food processor, gradually add 1/3 cup of water until the mixture becomes dough. Take the dough out of the food processor, and place it in the middle of a piece of parchment paper. Cover the top of the dough with another piece of parchment paper, and then roll the dough out until it reaches your desired thickness. Cut the crackers with a pizza cutter, and then place them on a parchment paper-lined baking sheet. Bake the crackers for 15 to 20 minutes at 350 degrees Fahrenheit.
For amaranth pancakes, mix 1 cup of amaranth flour, 1/2 cup of arrowroot powder, 1/2 cup of almonds, 1 teaspoon of baking soda and 1 teaspoon of cinnamon in a large bowl. In a separate bowl, mix 1 1/4 cups of water, 2 tablespoons of lemon juice, 2 tablespoons of vegetable oil and 2 tablespoons of honey. Combine both the mixtures together to form the batter. Drop the batter by spoonful into an oiled griddle, heated at medium high heat. Brown the pancakes on both sides, and then serve.
