Some good recipes that use marshmallows include classic Rice Krispies Treats and Martha Stewart's classic sweet potato casserole. Additionally, Rice Krispies can be replaced with Cheerios, Fruity Pebbles, Cinnamon Toast Crunch or Fruit Loops for different flavors.
To make Rice Krispies Treats, melt 10 ounces of marshmallows and 3 tablespoons of butter in a large pot over medium heat. Remove the pot from heat, and stir in 6 cups of Kellogg's Rice Krispies cereal. Press the Rice Krispies mixture into a 9-by-13-inch pan sprayed with cooking spray. Let the treats cool, and cut them into squares before serving. Chocolate chips, sprinkles or nuts can also be stirred in with the cereal.
Martha Stewart uses marshmallows in her classic sweet potato casserole dish. To make her dish, boil about 3 pounds of peeled sweet potatoes cut into 1-inch chunks in salted water. When the potatoes are easily pierced with a fork, drain the pot, and add 1/2 cup of milk, 4 tablespoons of butter and 1/2 teaspoon of ground nutmeg. Mash the potatoes until smooth, and season with salt and pepper. Place the mixture in a 2-quart baking dish, and top with 2 cups of mini marshmallows. Bake the dish at 375 degrees until the marshmallows are lightly browned and the dish is warm throughout, about 15 minutes.
