KFC's original chicken batter recipe is kept top secret, but there are many copycat recipes that are easily duplicated. Topsecretrecipes.com's version is highly rated with some reviewers claiming to enjoy it even more than KFC's original recipe.
The recipe calls for 8 small pieces of chicken, including the breast, thigh and drumsticks with the skin removed.
The ingredients needed to create the brine include 8 cups of water, 1/3 of cup salt and 2 tbsp of premium, MSG-free fish sauce.
For the breading, mix together 1 cup all-purpose flour, 1 1/4 cups of plain bread crumbs, 4 1/4 tsp of salt, 2 tsp of granulated sugar, 2 tsp of finely ground tellicherry pepper, 1/2 tsp of each (ground white pepper, paprika ground savory, ground sage, ground ginger, ground marjoram, onion powder, garlic powder and ground cayenne pepper.
For dredging the chicken, combine 4 eggs and 2 cups of skim milk.
Brine the chicken for 2 hours. While the chicken is marinating, combine the ingredient to make the breading and in a separate bowl, mix the ingredient for the dredging.
Dredge and bread each piece of chicken and let sit for 2 minutes. Shake off the excess breading and arrange on a baking sheet. Spray each piece with vegetable oil until and bake chicken for 40 to 45 minutes until it is nicely browned.
