Good recipes from the TV show "Cook's Country" include Amish potato salad and classic egg salad. To make Amish potato salad, first peel three pounds of potatoes and cut them into 3/4-inch chunks, and then cook them until tender for approximately 10 minutes. While cooking, begin to prepare the dressing. Add 1/3 cup of cider vinegar and 1/4 cup of sugar to a bowl, and microwave them for 30 seconds or until the sugar dissolves.
Add 2 tablespoons of yellow mustard, 1/2 teaspoon of celery seed, 1/2 teaspoon of salt and one yolk from a hard-boiled egg, and blend the mixture into a food processor until the mixture is smooth. When the potatoes are cooked, drain them and apply 2 tablespoons of the dressing. Place it in the refrigerator for 30 minutes or until it is cold.
Place 3/4 cup of sour cream into the rest of the dressing, and whisk it. Add three hard-boiled eggs, as well as the remaining separated egg white, and mash it with a potato masher. Finely chop a celery rib and add it and the dressing to the potatoes. Use salt and pepper to season as desired.
To make the classic egg salad, hard boil six eggs. Peel and dice them once they have cooled. Place 1/4 cup of mayonnaise, 2 tablespoons of minced red onion, 1 tablespoon of minced parsley, half a stalk of finely chopped celery and 2 teaspoons of Dijon mustard in a bowl. Add 2 teaspoons of lemon juice, 1/4 teaspoon of salt and black pepper to taste. Add the diced eggs, and mix until the ingredients have fully combined.
