Add 2 tablespoons of yellow mustard, 1/2 teaspoon of celery seed, 1/2 teaspoon of salt and one yolk from a hard-boiled egg, and blend the mixture into a food processor until the mixture is smooth. When the potatoes are cooked, drain them and apply 2 tablespoons of the dressing. Place it in the refrigerator for 30 minutes or until it is cold.
Place 3/4 cup of sour cream into the rest of the dressing, and whisk it. Add three hard-boiled eggs, as well as the remaining separated egg white, and mash it with a potato masher. Finely chop a celery rib and add it and the dressing to the potatoes. Use salt and pepper to season as desired.
To make the classic egg salad, hard boil six eggs. Peel and dice them once they have cooled. Place 1/4 cup of mayonnaise, 2 tablespoons of minced red onion, 1 tablespoon of minced parsley, half a stalk of finely chopped celery and 2 teaspoons of Dijon mustard in a bowl.
