Barefoot Contessa's Maple-Roasted Bacon and Alton Brown's Lacquered Bacon recipes are both good oven-baked bacon recipes. The Barefoot Contessa recipe adds a sweet note to savory bacon.
To make Barefoot Contessa's Maple-Roasted Bacon for four, in a 400 degrees Fahrenheit preheated oven, place a baking rack on a sheet pan, and place 16 slices of thick-cut smoked bacon in one layer. Bake for 20 minutes until the bacon browns. Remove the pan carefully from the oven, and brush the bacon with maple syrup. Bake for another five minutes, or until the bacon turns a warm brown color. On a paper towel-lined plate, transfer the bacon, and serve warm.
For lacquered bacon, ingredients needed include 1 pound thick-cut bacon, 2 tablespoons of either muscovado or demerara sugar and 1/4 teaspoon red pepper flakes. Lay the bacon in a single layer on a cooling rack, set in a parchment paper-lined half sheet pan, in a 400 degrees Fahrenheit oven. Sprinkle the black pepper, sugar and red pepper flakes onto one side of the bacon slices. Roast for 15 minutes, and evenly spread the sugar and pepper mixture on the bacon slices using the back of a spoon. Flip the bacon slices, and sprinkle the remaining sugar and black pepper on the other side. Continue roasting for 15 minutes for a chewy taste, or 18 minutes for a crispy taste.
