For overnight brunch egg bake, spray a 3-quart baking dish with cooking spray, and sprinkle 3 cups Colby-Monterey Jack cheese blend over the bottom. Melt 2 tablespoons margarine, and add 1/3 cup onions, 1/2 a chopped bell pepper and 4 1/2 ounces canned mushrooms. Cook until vegetables are tender, and arrange over the cheese in the dish. Cut 8 ounces cooked ham into strips, and place over vegetables. Sprinkle 3 cups of the cheese over top.
Beat 8 eggs, and whisk in 1/2 cup flour, 2 tablespoons parsley and 1 3/4 cups milk. Pour the liquid over the mixture in the baking dish, cover, and refrigerate overnight. Bake at 350 F for 55 to 65 minutes.
For overnight ham and egg casserole, layer 4 cups thawed hash browns, 1 cup cubed ham, 1 can chopped green chilis, 1/2 cup shredded Monterey Jack and 1/2 cup shredded cheddar in a greased baking dish. Beat 6 eggs in a bowl, and whisk in 1 can of evaporated milk and 1/4 teaspoon pepper. Pour over the mix in the dish, cover, and refrigerate overnight.
