Baked cod makes a light and healthy dinner entr?e. Lightly coat a baking dish with cooking spray. In a shallow bowl, mix together 3/4 cup of buttermilk, 1 teaspoon of Dijon mustard and 3 tablespoons of lemon peel. Combine 1 cup of instant potato flakes, 1 teaspoon thyme, salt and pepper in a second shallow bowl. Dip six cod fillets first in the buttermilk mixture, and then coat both sides in the potato mixture. Cook the cod fillets in a large skillet over medium heat for two minutes on both sides, until golden brown, then transfer to the baking dish and bake until done.
Hy-Vee's version of black bean salad combines 1 1/2 cups of jicama, a red bell pepper, 1/4 cup of red onion, 1 cup of thawed frozen corn and a can of black beans. Additional ingredients include 2 tablespoons of cilantro, 1 tablespoon of lime juice and 1/3 cup of light Italian salad dressing. Peel the jicama and dice it, and then dice the bell pepper and onion. Combine all of the ingredients in a salad bowl, and toss it with dressing.
