The Food Network and Martha Stewart both have good recipes for oatmeal cranberry cookies. Another good recipe is oatmeal cranberry white-chocolate chunk cookies that has added white chocolate as well as cranberries and oats.
To make oatmeal cranberry cookies, beat together 1 cup of unsalted butter, 3/4 cup of granulated sugar and 3/4 cup of brown sugar until creamy, then mix in 2 eggs and 1 teaspoon of pure vanilla extract. Sift together 1 1/2 cups of flour, 1 teaspoon of baking soda and 1/2 teaspoon of salt, then mix in 3 cups of rolled oats, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and 1/4 teaspoon of cardamom. Fold in 1 cup of dried cranberries before spooning the mixture onto a cookie sheet. Bake for 10 to 12 minutes at 350 degrees Fahrenheit.
Another recipe also requires creaming together 2/3 cup of butter and 2/3 cup of brown sugar before adding 2 eggs in one bowl and 1 1/2 cups of oats, 1 1/2 cups of flour, 1 teaspoon of baking soda and 1/2 teaspoon of salt in another bowl. Add the wet and dry ingredients together, mix in 5 ounces of dried cranberries and 2/3 cup of white-chocolate chunks. Bake at 375 degrees Fahrenheit for 10 to 12 minutes.
