To the wet ingredients, mix in 1 cup of all-purpose flour. Melt 10 tablespoons, or 1 1/4 sticks, of unsalted butter, and allow it to cool slightly. Slowly pour in the butter while continuously beating the mixture. Spoon 1 tablespoon of batter into each mold in a madeleine pan, and bake them for 16 minutes. Allow the cookies to cool, and then dust them with powdered sugar.
To make the second recipe, preheat the oven to 375 degrees Fahrenheit. Mix together 2 eggs, 1/2 teaspoon of vanilla extract and 1/2 teaspoon of lemon zest with an electric mixer on high speed for approximately five minutes. Mix in 1 cup of confectioners’ sugar, and continue to beat the mixture until thick, approximately five to seven minutes.
Sift together 3/4 cup of all-purpose flour and 1/4 teaspoon of baking powder. Fold the dry mixture into the wet mixture one-quarter at a time. Melt and slightly cool 1/2 cup of butter, and add it to the mixture. Transfer the batter to the madeleine molds, and bake them for 10 to 12 minutes.
