Beat together 2 large eggs and 2/3 cup of sugar with an electric mixer, and then mix in 1 teaspoon of vanilla extract, 1/2 teaspoon of grated lemon peel and a pinch of salt.
To the wet ingredients, mix in 1 cup of all-purpose flour. Melt 10 tablespoons, or 1 1/4 sticks, of unsalted butter, and allow it to cool slightly. Sift together 3/4 cup of all-purpose flour and 1/4 teaspoon of baking powder. Fold the dry mixture into the wet mixture one-quarter at a time. Melt and slightly cool 1/2 cup of butter, and add it to the mixture. Transfer the batter to the madeleine molds, and bake them for 10 to 12 minutes. Cool the cookies on a rack, and then dust them with confectioners’ sugar.
