Some good recipes for lemon shortbread cookies are lemon shortbread heart cookies, lemon rosemary shortbread and lemon lavender shortbread. Basic ingredients include butter, sugar, flour and lemon zest.
To make lemon shortbread heart cookies, cream together 1/2 cup of softened unsalted butter and 1/4 cup of powdered sugar. Mix in 2 teaspoons of finely grated lemon peel and 1/2 teaspoon of vanilla extract before folding in 1 cup of all-purpose flour and 1 pinch of coarse salt.
