AllYou lists a variety of easy-to-follow recipes that can be made using leftover chicken. Some good leftover chicken recipes include chicken tostadas and chicken lettuce wraps.
To make simple chicken tostadas gather eight flour or corn tortillas, two pitted and chopped avocados, 1 tablespoon of lime juice, 1/2 teaspoon of salt, 1 cup refried beans, 2 cups of shredded cooked chicken, 1.5 cups of shredded pepper Jack cheese, 1 cup of tomato salsa and 2 cups of shredded Romaine lettuce.
Preheat the oven to 400 degrees Fahrenheit. Meanwhile, lightly spray both sides of the tortillas with cooking spray and place them on a lined baking sheet. Bake the tortillas for eight minutes or until they are crisp. Toss the avocados with lime juice and season the mixture with salt. Spoon some refried beans on top of the prepared tortillas, add the cooked chicken and avocado mixture, and sprinkle with cheese. Place the tortillas in the oven for seven to eight minutes until they are warmed through. Top the tortillas with lettuce and salsa to serve.
To make chicken lettuce wraps gather 1/4 cup slivered almonds, 1 cup of mayonnaise, 2 teaspoons of curry powder, 1/2 teaspoon paprika, 3 thinly-sliced scallions, 1/2 cup golden raisins, 4 cups shredded cooked chicken, salt and pepper, and 16 small Boston lettuce leaves. Cook almonds in a dry skillet over medium heat until they are fragrant. Remove the almonds from the skillet, and allow them to cool for five minutes.
In a separate bowl, combine mayonnaise, curry powder, paprika, scallions, raisins and almonds. Add in chicken, and stir until it is coated. Season the mixture with salt and pepper. Place lettuce leaves on a platter, and fill each leaf with about 2 tablespoons of the chicken mixture to serve.
