Two good recipes for Jell-O pies with a graham cracker crust are strawberry flavored Cool and Easy pie and Summer Berry Cheesecake pie. Use either a store-bought graham cracker crust or one prepared at home.
The Cool and Easy pie calls for strawberry gelatin mix, but any flavor may be used. Add 2/3 cup boiling water to a 3-ounce package of gelatin and stir until the gelatin is completely dissolved, or about 2 minutes. Add enough ice to 1/2 cup cold water to measure 1 cup, and pour into the gelatin, stirring until the mixture thickens slightly. Remove unmelted ice.
Whisk in one 8-ounce tub of whipped topping. Refrigerate for 15 to 20 minutes, and spoon into pie crust. Refrigerate 4 hours.
For the cheesecake pie, begin by beating together 8 ounces softened cream cheese with 2 tablespoons sugar. Fold in 1 cup whipped topping and spread the mixture over the bottom of the pie crust.
Add 3/4 cup boiling water to a 3-ounce package of any flavor of gelatin and stir until the gelatin mix dissolves completely. Stir in 1/2 cup ice cubes until they melt, and let the mixture stand for 5 minutes.
Arrange 1/2 cup blueberries in the pie's center and surround with 1 1/2 cups strawberry halves. Pour the gelatin over the fruit and refrigerate for 3 hours. Top with 1 cup whipped topping.
