To make Food Network's recipe, grate 2 pounds of white-fleshed sweet potatoes using a food processor. Mix the potatoes with 1/4 cup of flour, 1/4 cup of shredded coconut, 1/4 cup of raisins, 1/2 teaspoon of vanilla, 1/2 teaspoon of cinnamon, 1/2 teaspoon of ginger and 1/4 teaspoon of nutmeg.
Heat 1 cup of dark brown sugar, 3 cups of coconut milk and 1/4 cup of evaporated milk over low heat for 4 minutes. Mix the wet and dry mixture together, and pour into a greased and floured baking dish. Bake for 90 minutes at 350 degrees F.
To make Eat Mega's recipe, grate 1 1/2 pounds of sweet potatoes using a food processor or by hand. Combine the potatoes with 1 cup of brown sugar, 1 cup of flour, 2 cups of coconut milk, 1/2 cup of cornmeal and 1 tablespoon of cinnamon. Also combine them with 1 tablespoon of butter, 1/2 teaspoon of crushed ginger, 1/2 teaspoon of nutmeg, 1/2 teaspoon of allspice and 2 teaspoons of vanilla extract.
Mix in 2 tablespoons of rum, and pour the mixture into a greased baking pan. Let the batter rest for 15 minutes, and bake for 60 to 90 minutes at 350 degrees.
