Make 2 0.3-ounce boxes of strawberry-flavored Jell-O using 1 cup of boiling water and 1 cup of cold water. Immediately add the liquid Jell-O to the cottage cheese and blend until smooth. Pour the mixture into two pre-made graham cracker crusts and refrigerate until set.
Once the Jell-O has set, slice one pint of strawberries and layer the fruit on top of the Jell-O in the pie crusts. Make one additional box of strawberry Jell-O and pour the liquid over the strawberries. Return the pies to the refrigerator until the strawberry layer has set. Garnish with whipped topping and additional sliced fruit.
