For this no-bake recipe, take 1/2 cup dried apricots, 1/2 cup cherries, dates, 1/2 cup unsweetened shredded coconut, 1 cup cashews and 2 tablespoons chia seeds, and blend them in a food processor. If they are not sticking together well, add coconut oil, some nut butter or some extra dates. Press this mixture into an 8-by-8-inch square on parchment paper, refrigerate, and then cut into squares.
Create honey almond chocolate crisp granola bars by lining a glass baking dish with two sized, criss-crossed parchment paper strips. In a mixing bowl, combine 1 and 3/4 cups quick-cooking oats, 1/3 cup sliced almonds, 2/3 cups mini dark chocolate chips, 1 teaspoon cinnamon and 1/2 teaspoon salt.
