Smothered enchiladas featured in Southern Living magazine and Campbell's easy ground beef enchiladas are highly rated enchilada recipes. Each recipe contains less than 10 ingredients and has a 10- to 20-minute prep time.
For the smothered enchiladas, brown 2 pounds of ground beef in a skillet, drain it, and stir in 2 ounces of chopped green chilis and a package of taco seasoning. Combine 1 16-ounce can of sour cream, 2 10-ounce cans of cream of chicken soup and another 2 ounces of green chilis. Pour half of the soup mixture into a lightly greased 13-by-9-inch baking dish.
Fill 8 tortillas with the beef mixture, roll each tortilla, and place it seam side down into the baking dish. Pour the rest of the soup mixture over the tortillas, top with cheese, and bake at 350 degrees Fahrenheit for approximately 25 minutes.
To make Campbell's easy beef enchiladas, brown 1 pound of ground beef in a skillet. Stir in a package of taco or burrito seasoning, 1 can of refried beans, 1 can of condensed cheddar soup, and a 1/2 cup of chopped onion. Spoon the beef mixture into 12 tortillas. Arrange the tortillas into a 3-quart shallow baking dish.
Top the stuffed tortillas with 1 1/2 cups of enchilada sauce and 1/2 cup of shredded cheddar, and bake at 350 F for about 20 minutes.
