Some good recipes for grilled swordfish are grilled swordfish with lemon, mint and basil from the Food Network; grilled swordfish steaks with basil-caper butter; and grilled swordfish with cucumber lime salsa. Another recipe for swordfish uses a marinade made from 1/3 cup of white wine, 1/4 cup of lemon juice, 2 tablespoons of soy sauce and 2 tablespoons of olive oil seasoned with 4 garlic cloves, 1 tablespoon of poultry season, and salt and pepper.
To make grilled swordfish steaks with basil-caper butter, combine 6 tablespoons of softened unsalted butter with 2 teaspoons of chopped and drained capers, 1 teaspoon of fresh lemon juice, 2 tablespoons of chopped basil, and salt and pepper to taste.
While chilling the butter, season 4 8-ounce swordfish steaks with salt and pepper, and brush a mixture of 1 tablespoon of lemon juice mixed with 1 tablespoon of extra-virgin olive oil over them. Refrigerate the swordfish steak for 15 minutes before grilling them for four minutes on each side. Serve the swordfish topped with the basil-caper butter.
To make swordfish with salsa, marinate 1 6-ounce swordfish steak in 1 tablespoon of fresh lime juice, 1 teaspoon of honey, 1 teaspoon of oil and 1 teaspoon of ground coriander at room temperature for 15 minutes. While grilling the swordfish for three to four minutes on each side at medium-high heat, make the salsa by combining the pulp of 1 lime, 1 peeled, seeded and diced cucumber, 1 tablespoon of chopped cilantro, 1 tablespoon of chopped scallions and 1 teaspoon of minced jalapeño in a bowl. Season the mixture with 1 teaspoon of sugar and 1/4 teaspoon of salt before spooning the salsa on the swordfish.
