Make Bobby Flay's perfect burger by forming 1 1/2 pounds of 80 percent lean ground chuck into four patties, making sure that the center of the burger has a slight depression and the meat is only loosely compacted. Sprinkle salt and pepper on both sides before grilling on high heat for 3 to 4 minutes on both sides. Spice up the burger by folding a piece or cube of cheese in the center of the meat. Some cheese options include blue cheese, pimiento cheese and mozzarella.
Another good grill hamburger recipe is barbecued burgers. First make the barbecue sauce by adding 1 cup of ketchup, 1/2 cup packed brown sugar, 1/3 cup sugar, 1/4 cup honey and 1/4 cup of molasses into a saucepan. Stir in 2 teaspoons prepared mustard, 1 1/2 teaspoons Worcestershire sauce, 1/4 teaspoon salt, 1/8 teaspoon pepper and 1/4 teaspoon liquid smoke, and heat to a boil. Remove the sauce from the heat, and pour 1/4 cup of it into a bowl along with 1 egg and 1/3 cup quick-cooking oats. Season with 1/4 teaspoon onion salt, 1/4 teaspoon garlic salt, 1/4 teaspoon pepper and 1/8 teaspoon salt. Fold in 1 1/2 pounds of ground beef, and form into 6 patties.
