To make chef Laura Calder's recipe for deep-fried zucchini blossoms, gather peanut oil for deep-frying, 6 to 8 zucchini blossoms, 1 egg and 2 tablespoons milk. You also need 1/4 cup all-purpose flour, 1/4 cup cornstarch and flaked sea salt to taste. Fill your frying pan with peanut oil until it reaches 2 inches deep, and heat the oil until it reaches 350 degrees Fahrenheit.
Wash and dry your zucchini blossoms. Place the flour, cornstarch and salt into a shallow dish, stirring to combine. Beat 1 egg in another shallow dish. For each blossom, dip it in the egg wash and then in the flour mixture to coat. Fry each until golden, removing to a paper towel to drain.
Make Giada De Laurentii's fried zucchini sticks by first heating 2 inches of olive oil in a deep frying pan over medium heat until the temperature reaches 350 degrees Fahrenheit. Gather 3 medium zucchini, and slice them into 3-inch strips about a 1/2 inch wide. Grate 1 3/4 cups of Parmesan cheese, and set aside.
Gather 1 1/2 cups panko breadcrumbs, and mix in 3/4 teaspoon of salt. Whisk two eggs in a separate shallow dish. Dip the zucchini strips in the egg wash and then the flour to coat, and fry the strips in batches until golden. Sprinkle the 1/4 cup of Parmesan cheese over the still-hot zucchini sticks once removed from the oil. Let them drain on a paper towel prior to serving.Learn more about Vegetables
