To make chef Laura Calder's recipe for deep-fried zucchini blossoms, gather peanut oil for deep-frying, 6 to 8 zucchini blossoms, 1 egg and 2 tablespoons milk. You also need 1/4 cup all-purpose flour, 1/4 cup cornstarch and flaked sea salt to taste. Fill your frying pan with peanut oil until it reaches 2 inches deep, and heat the oil until it reaches 350 degrees Fahrenheit.
Wash and dry your zucchini blossoms. Place the flour, cornstarch and salt into a shallow dish, stirring to combine. Beat 1 egg in another shallow dish. For each blossom, dip it in the egg wash and then in the flour mixture to coat. Fry each until golden, removing to a paper towel to drain.
