Some good recipes for fresh peach oatmeal include Peaches and Cream Cheese Oatmeal Bake and Baked Blueberry and Peach Oatmeal. Filling for the Peach and Cream Cheese Oatmeal Bake requires 2 pounds of peaches, 1 tablespoon of sugar, 1 tablespoon of cornstarch and 1/4 teaspoon of salt.
Make the oatmeal by using 4 1/2 cups of rolled oats, 1 1/2 teaspoons of cinnamon, 2 1/4 teaspoons of baking powder, 3/8 teaspoon of salt and 10 ounces of unsweetened applesauce. Also incorporate 9 tablespoons of maple syrup, 1 1/2 teaspoons of vanilla and 8 ounces of cream cheese.
Spray a medium-sized baking dish with cooking spray, or grease it with butter. Preheat the oven to 375 degrees Fahrenheit. Chop the peaches into medium-sized chunks, and transfer them to a large mixing bowl. Add cornstarch, sugar and salt.
Use a food processor to pulverize 2 1/4 cups of the oats. Pour the powdered oats into a separate bowl, along with the rest of the whole oats, cinnamon, baking powder and salt. Stir the ingredients together. Add the applesauce, maple syrup, vanilla and 9 tablespoons of water to the oat mixture. Once more, stir the ingredients together.
Spread half the oat mixture over the bottom of the baking dish. Spread the cream cheese over the first layer of oats. Chop the peach pieces in the food processor, and spread them over the cream cheese. Cover the peaches with the rest of the oat mixture. Bake the ingredients for 35 minutes.
