Some highly rated recipes for a flourless cake are Food Network's and Epicurious' Flourless Chocolate Cake. The Epicurious recipe uses only five ingredients and takes about 45 minutes to prepare. Food Network's recipe uses a few extra ingredients, including Kahlua liquor and vanilla extract and takes about 25 minutes to prepare.
To make Food Network's Flourless Chocolate Cake, first, melt together 1 pound coarsely chopped semi-sweet chocolate, 1/2 pound butter cut in cubes, and 1/4 cup Kahlua in a double boiler. In a separate bowl, mix together 8 eggs, 1/4 cup sugar, 1 teaspoon vanilla and 1/2 teaspoon salt using an electric mixer until the mixture doubles in size. Use a spatula to gradually fold the egg mixture into the chocolate mixture in three different parts. Pour the cake batter into a buttered springform pan. Put the springform pan into a roasting pan filled halfway with boiling water.
Bake the cake for 40 to 45 minutes at 325 F. Remove the springform pan from the roasting pan, and allow it to cool on a wire rack. Refrigerate the cake in the springform pan overnight. About 30 minutes before serving, remove the cake from the springform pan, and then dust with confectioner's sugar or cocoa powder and garnish with raspberries.
