Add 4 cups low-sodium chicken broth, 3 cups whole milk, 2 cups half-and-half, 1/2 teaspoon oregano and 1/2 teaspoon red pepper flakes. Bring to a simmer, and cook for 30 minutes. For Sausage Potato Casserole, cook 1 pound of ground sausage over medium heat. Drain the fat. In a large bowl, combine one can condensed cream of mushroom soup, 3/4 cup milk, 1/4 cup chopped onion, 1/2 teaspoon salt and 1/4 teaspoon pepper. Peel and thinly slice approximately 3 cups potatoes. In an ungreased, 11-by 7-inch baking dish, layer half the potatoes, the soup mixture, then the sausage. Repeat the layers. Cover and bake at 350 degrees Fahrenheit for 1 1/2 hours. Uncover and top with 1 cup shredded cheddar cheese. Bake five minutes to melt the cheese.
