To make poached pears, combine 1 25-ounce bottle of dessert wine with 2 cups of simple syrup, 1 broken cinnamon stick, 2 tablespoons of honey and a chopped 3/4-inch piece of ginger. Stir in the seeds of 1 vanilla bean as well as the empty bean. Simmer until the honey melts, stirring occasionally. Add 6 peeled Anjou pears, and cool for 15 to 20 minutes, turning occasionally. Remove the pears.
Simmer the syrup for 15 to 20 minutes, and let it cool to room temperature. Discard the cinnamon stick pieces and the vanilla bean. Drizzle the pears with the syrup on top, and serve with vanilla ice cream.
To make roasted pears, arrange 6 peeled and cored Bosc pear halves cut-side up in a baking dish. Whisk 1/2 cup of apple juice and 1/2 cup of dark brown sugar over medium-high heat. When the sugar dissolves, whisk in 3 tablespoons of butter. Pour the mixture over the pears, and bake at 400 degrees Fahrenheit for 35 minutes. Top the pears with vanilla ice cream.
To make pan-fried pears, cook 50 grams of butter over medium heat. Once the butter foams, add 1 teaspoon of chili flakes and 1 teaspoon of ground ginger. Stir in 4 peeled, cored and quartered pears. Cook for one to two minutes on each side. Serve with yogurt.
