Some good chili sauce recipes are chili sauce for hot dogs, fries and hamburgers and Emeril's tomato chili sauce. Each recipe takes about five minutes of preparation time.
To make a good chili sauce for hot dogs, hamburgers and french fries, combine 4 cups of water, 2 cups of beef or chicken stock, and 4 ounces tomato paste. Add 1 pound of lean ground beef, and break it up into smaller pieces with your hands. Stir in 1 tablespoon each of dried onion and chili powder, 1 teaspoon of kosher salt, 1 teaspoon of garlic powder, 1 teaspoon of cinnamon, 1 teaspoon of dried parsley and 1/2 teaspoon of cayenne pepper. Bring to a steady simmer at a low heat for two hours, or until it thickens.
For Emeril's tomato chili sauce, heat 1 tablespoon of vegetable oil, then add 1 cup of chopped onions. Shake on salt and pepper to taste, and cook for one minute. Next, add 5 cups of peeled, seeded and diced vine-ripened tomatoes, salt and pepper to taste, and cook for one minute. Stir in 1/2 of a small, stemmed and chopped jalapeño pepper, 1/2 teaspoon of cinnamon, 1/4 teaspoon of allspice, 1/8 teaspoon of freshly ground cloves, and 2 cups of white vinegar. Turn up the heat until it boils, then lower the heat to medium-low and simmer for about one hour.
