Allrecipes.com’s simple stir-fry chicken and vegetables and BBCGoodFood.com’s spicy chicken and vegetable stir-fry are both good recipes for chicken and veggie stir fry. Allrecipes.com’s easy-to-make recipe serves two, whereas GoodFood’s flavorful recipe serves four.
To make Allrecipes.com’s stir-fry chicken and vegetables, combine 6 ounces of finely cut, skinless, boneless chicken breast, 2 tablespoons of soy sauce, 2 tablespoons of dry sherry and 1 tablespoon of cornstarch. Next, heat a tablespoon of vegetable oil in a huge skillet, and cook 1 cup of broccoli, a large piece of green bell pepper, one zucchini and three cloves of minced garlic for around three minutes.
Add 1/2 cup of chicken broth, cover the cooking pan, and allow it to simmer for up to five minutes. Heat a tablespoon of vegetable oil, and cook the chicken for five minutes. Add vegetables, continue stirring for a few minutes, and sprinkle six chopped green onions.
To make GoodFood’s spicy chicken and vegetable stir-fry, cook 400 grams of mixed green vegetables in a boiling pan of salted water for two minutes, drain them, heat a tablespoon of sunflower oil in a pan, and fry four sliced, skinless chicken breasts for four minutes. Then add the vegetables, 1 tablespoon of soy sauce, a 120-gram sachet of stir-fry oyster sauce and a red chili. Finally, stir-fry quickly and add spring onions and 25 grams of toasted cashews.
