Good chestnut stuffing recipes include Chestnut Stuffing from the Food Network and Jamie Oliver's Pork Stuffing. Some of the basic ingredients include chestnuts, breadcrumbs, vegetables, spices and meat.
To make chestnut stuffing, roast 1 pound fresh chestnuts or use 7 ounces bottled chestnuts, and chop them into coarse pieces. Combine the chestnuts and 4 cups diced cornbread in a bowl. Spread 8 cups freshly torn breadcrumbs onto a baking sheet, and bake them at 350 degrees Fahrenheit for 15 minutes. Add the breadcrumbs to the chestnut mixture as well.
Cook 2 chopped celery ribs, 1 chopped yellow onion and 1 chopped turkey liver in 1 cup unsalted butter. Once the vegetables soften, add them to the chestnut mixture along with 1 cup chicken stock, 1/2 cup parsley, 1/4 cup sage leaves, 1 teaspoon salt and 1/4 teaspoon pepper. Work in 2 lightly beaten eggs, and spoon the mixture into a baking dish. Bake the stuffing at 450 degrees Fahrenheit for 30 minutes covered, remove the lid, and bake for another 30 minutes.
Combine 2 finely minced onions, 2 ounces fresh breadcrumbs and 7 ounces crushed and crumble chestnuts in a bowl. Add 2 1/4 pounds diced pork shoulder, 1 bunch fresh sage leaves, 3 slices chopped smoked bacon, and pepper and salt to taste in a food processor, and blend until the ingredients are roughly chopped. Season the mixture with 1 grated whole nutmeg and the zest from 1 lemon and 1 orange, and add it to the chestnut mixture. Mix everything well by hand, and bake it in a baking dish for 50 minutes at 375 degrees Fahrenheit.
