Chef Fabio's Kale and Smoked Bacon Salad calls for 4 cups of kale, 1 cup diced smoked bacon, 1/2 cup Peppadews, 1 cup olive oil, 1/4 cup white balsamic vinegar, 2 teaspoons of minced shallots, 2 teaspoons of honey, 1 teaspoon of Dijon mustard, 1 cup of grated ricotta salata, and salt and pepper to taste.
To prepare this salad, wash the kale in cold water, and remove the stems. Pat the leaves dry. Using medium heat, cook the smoked bacon for 10 to 12 minutes, or until the bacon is crispy and the fat rendered. Separate the bacon from the excess fat, and set it aside.
Combine the Peppadews, olive oil and balsamic vinegar. Mix well. Add the minced shallots, honey and Dijon mustard to this mixture, and blend them in a blender to finish the dressing. Add salt and pepper to taste. To serve, toss the kale with the dressing. Sprinkle the bacon and the ricotta salata over the salad.
