To make a delicious Cajun turkey rub, combine 1 cup of oregano, 2 tablespoons of paprika, 2 tablespoons of red pepper flakes, 2 tablespoons of garlic power, 1/4 cup of onion powder and a 1/4 cup of salt. Make sure that you apply the rub all over the turkey as well as inside it. Let the turkey sit for about two hours before cooking.
Another Cajun turkey rub recipe combines 1/4 cup of coarse salt, either kosher or sea; 2 tablespoons of dried oregano; 3 tablespoons of sweet paprika; 2 tablespoons of garlic powder; 2 teaspoons of cayenne pepper; 2 tablespoons of dried thyme, preferably ground;1 tablespoon of freshly ground black pepper; 1 tablespoon of freshly ground white pepper; 2 teaspoons of ground dried sage leaves; and 2 tablespoons of onion powder. Mix the ingredients in a small bowl with a whisk, or place them in a jar to shake them together. Store in an airtight container away from heat and light. Other possible additions to include in a Cajun rub are bay leaves, thyme, cumin, nutmeg and Morton's table salt.
