Taste of Home offers an easy-to-prepare, flavor-packed cabbage roll casserole that combines shredded cabbage with a ground beef and rice mixture. The layered casserole gets baked and then topped with cheese for a comforting, tasty dish. Food blog Kitchen Stewardship provides a slow cooker version.
Make the ground beef mixture by browning 2 pounds with 1 chopped onion. Once the meat is cooked throughout and no longer pink, add 3 cloves of minced garlic, and cook for one more minute or until the garlic is fragrant. Add 1 small can of tomato sauce along with 1 teaspoon dried thyme, 1/2 teaspoon dill and 1/2 teaspoon sage. Season the mixture with salt, pepper and a pinch of cayenne.
Return the skillet to the heat, and simmer it for five minutes before adding 4 cooked strips of bacon and 2 cups of cooked rice. Add a layer of shredded cabbage to the bottom of a greased baking dish. Top it with half of the meat and rice mixture, and repeat the layers, ending with a layer cabbage and topping it with a can of tomato sauce.
Bake the casserole covered for 45 minutes at 375 degrees Fahrenheit before uncovering it and topping it with shredded mozzarella. Bake the dish until the top is melted and bubbly. Alternatively, layer cabbage and meat in a slow cooker and cook it on low for eight hours or on high for four hours.
