Some good recipes for bread pudding sauce include Land O’Lakes’ Vanilla Sauce, Emeril Lagasse’s Whiskey Sauce and Paula Deen’s brandy sauce. To make Land O’Lakes recipe, combine ½ cup butter, ½ cup sugar, ½ cup firmly packed brown sugar and ½ cup heavy whipping cream in 1-quart saucepan.
Cook over medium heat, stirring occasionally, for 5 to 8 minutes or until mixture thickens and reaches a full boil. Gently stir in 1 tablespoon vanilla. Serve over warm bread pudding.
For Emeril Lagasse’s recipe, combine 2 cups heavy cream, ½ cup whole milk and ½ cup granulated white sugar in a 1-quart saucepan over medium heat. Whisk together 2 tablespoons cornstarch and ¼ cup bourbon or other whiskey in a small mixing bowl to make a slurry. Pour into cream mixture and bring to a boil. As the sauce begins to boil, reduce heat to a gentle simmer. Cook, stirring occasionally, for 5 minutes. Remove from heat and add a pinch salt, 2 tablespoons unsalted butter and ½ cup bourbon or other whiskey. Serve warm.
To make Paula Deen’s sauce, combine 1 cup granulated sugar, ½ cup melted butter, 1 beaten egg and 2 teaspoons pure vanilla extract in saucepan over medium heat. Stir mixture until sugar melts. Add ¼ cup brandy and stir well. Pour sauce over bread pudding; serve warm or cold.
