To make easy roasted chicken thighs, prepare a marinade containing 1/2 cup of olive oil, the juice from one lemon, and salt and pepper to taste. Toss 8 bone-in, skin-on chicken thighs in the marinade and chill for up to one hour. Place the skin side of the chicken down on a roasting pan, and cook at 375 degrees Fahrenheit for 20 to 25 minutes before turning the chicken and cooking for another 10 minutes.
