Martha Stewart's steamed artichokes with lemon garlic aioli and Jenna Weber's grilled artichokes with spicy lemon aioli are two good recipes using boiled artichokes. Both recipes pair artichokes with a simple sauce for an easy hors d'oeuvre, but Weber's uses sriracha for a spicy kick.
To make 10 servings of steamed artichokes, boil and simmer 8 trimmed and stemmed artichokes with 4 garlic cloves in a large pot of water for 35 minutes. Drain the pot, transfer the artichokes and garlic to a plate, and let cool. To make the lemon garlic aioli, peel and mash the garlic cloves, and mix them with 1 cup of mayonnaise, 1 tablespoon of lemon zest, 2 tablespoons of lemon juice and a pinch of sugar. Season with salt and pepper to taste, and serve with the artichoke leaves.
Jenna Weber's recipe is similar, but requires grilling the artichoke leaves before serving. Boil and simmer 2 large artichokes with the juice of 1 lemon and a pinch of salt in a large pot for 20 minutes. Remove the artichoke leaves, and place them on paper towels to drain. Top the leaves with olive oil, lemon juice and sea salt, and grill, cut-side down, for 8 to 10 minutes.
To make the spicy lemon aioli, mix 1/2 cup of mayonnaise, the juice of 1/2 of lemon, 1/4 teaspoon of sriracha sauce and 1/4 teaspoon of minced garlic. Season with sea salt and pepper and serve with the grilled artichoke leaves.
