To make the Paula Deen version, preheat a grill or broiler, and then season 3 1/2 pounds of chicken with salt and pepper. Grill the chicken without sauce, but have a small bowl filled with sauce for basting. After about 10 minutes on the grill, begin basting the chicken on each size, and then grill for 5 more minutes. Put the chicken on a serving plate, drizzle with remaining BBQ sauce and serve with lime wedges.
For the other version, put 3 pounds of chicken in a bowl and cover with a mixture of 2 cups of barbecue sauce, 1/4 cup of seasoning rub and 1/4 cup of apple cider vinegar. Allow it to sit from 4 hours to overnight. When ready to cook, preheat the oven to 225 F. Place the chicken on the rack with a pan underneath to catch the dripping, and cook for up to 2 hours or until the internal temperature reaches 165 degrees. Brush the chicken with 1/2 cup of barbecue sauce, fold the foil over the meat and cook for an additional 30 minutes.
