Some good recipes for authentic Mexican cheese dip are restaurant-style queso blanco, Best Mexican white cheese dip and questo blanco dip. The recipes require white American cheese, milk, green chiles and spices.
To make Best Mexican white cheese dip, melt 1/2 pound of white American cheese and 1 tablespoon of butter in 1/4 cup of milk in a saucepan at a low heat, stirring often. Add in one 4-ounce can of green chiles, 1 teaspoon of cumin, 1 teaspoon of garlic salt and one pinch of cayenne pepper until the mixture is well-blended. Serve the dip with tortillas or chips.
Another recipe uses both white American cheese and Monterrey Jack cheese. First, saute 1/4 cup of diced white onion and one seeded and diced jalapeno pepper in 1 tablespoon of oil, and then stir in 12 ounces of shredded white American cheese, 4 ounces of shredded Monterrey Jack cheese and 1/4 cup of cream, half-and-half or whole milk. Once the cheese melts, add 2/3 cup of cream, two seeded and diced roma tomatoes and one bunch of chopped cilantro to the mixture. Serve the cheese with freshly fried tortillas or chips. Another recipe suggests stirring pickled jalapeños and some of the pickled jalapeño juice into the mixture.
